Autumnal Apple Cinnamon Oatmeal


The crisp morning air of Autumn.

The light scratching sound of fallen leaves rolling over the porch. The lingering scent of the candles burned from the night before.

The desire for a comforting breakfast on the forefront of your mind.

The flavor combination of apple and cinnamon has always been one to satisfy my appetite and my hunger on cool fall mornings. This recipe has converted most of my friends to oatmeal lovers and keep them coming back for more flavor combinations to try.

You can prepare this oatmeal bowl as overnight oats for a quick on-the-go breakfast option as well as double or triple the recipe for feeding the family.

Serves: two

Ingredients:

  • 1 cup old fashioned rolled oats

  • 1 cup dairy free milk

  • 1 cup water

  • 1/4 teaspoon 100% pure vanilla extract

  • 2 large apples, diced

  • ground cinnamon to taste

Options for something a little sweeter:

  • 2 Tablespoon raisins - I love adding golden raisins.

  • 2 teaspoons raw local honey

Directions:

  1. Wash the apples and dice with a sharp knife.

  2. Add the dairy free milk, water, and vanilla extract to a medium sized pot. Bring to a boil over medium heat and lower to a slight simmer.

  3. Add in the oats and apples. stir occasionally to ensure the oatmeal does not stick to the bottom of the pot. You can also wait until the oatmeal is finishing cooking to mix the apples in at that point or simply add the apples as a topping.

  4. Cook 5 minutes or until the oats are tender and the oatmeal reaches your desired consistency.

  5. Remove the oatmeal from the heat and stir in the ground cinnamon.

  6. Serve by filling two bowls with equal amounts of the oatmeal. For added sweetness, top with a sprinkle of raisins or a drizzle of raw local honey.

  • 1/2 cup dairy free milk

  • 1 large apple, diced

  • 1/8 teaspoon 100% pure vanilla extract

  • cinnamon to taste

Options for extra sweetness:

  • 1 tablespoon raisins - I love adding golden raisins.

  • 1 teaspoon raw local honey

Directions:

  1. With a sharp knife, cut the apple into small chunks.

  2. In a container, add the oats, dairy free milk, diced apple, vanilla extract, and cinnamon. Mix until combined evenly.

  3. Cover and store in the refrigerator overnight. Remove from the refrigerator in the morning, stir, and enjoy.

Heating the oats in the microwave for 1-2 minutes before eating enhances all of the amazing flavors, especially in this recipe!
