Lucky Shamrock Shake


Every time I see spinach in a smoothie recipe, I think "Oh no, another earthy and bitter smoothie" which is why I was a bit nervous to blog a smoothie containing spinach. However, this drink is nothing but sweet, creamy, and delicious. You cannot taste the spinach at all! I know..you're still skeptical but trust me when I tell you that this shamrock shake is absolutely the Luck O' The Irish. My take on the shamrock shake is great because it is versatile in that it can be a nutrition packed breakfast to kick start your morning, used as a pre or post workout snack, and enjoyed as a sweet St. Patrick's Day party treat. Give this allergy free shamrock shake a try and taste the goodness for yourself!

Serves: 1 shamrock shake

Ingredients:

  • 1 large and ripe banana

  • 3/4 cup dairy free milk

  • 1/8 teaspoon 100% pure vanilla extract

  • 1/2 cup baby spinach, washed

  • green sprinkles and pearl gems for optional decoration

Directions:

  1. In a high speed blend, add the banana, dairy free milk, and vanilla extract. Blend until the mix is completely smooth.

  2. Add the spinach. It is up to personal preference as for including the stem or not. I like to include the stems as the are being blended and won't be an issue in terms of texture and they contain high quality nutrients. Blend until the mix is smooth.

  3. To decorate the glass, pour green sprinkles into a dish. Wet your finger with warm water and run them along the edge of the glass. Dip the rim of the glass into the sprinkles until the sprinkles coat the rim.

  4. Pour the shake into the glass, pop a festive straw inside, and serve.
