Green Citrus Salad


This citrus salad was one of the most refreshing salads I have ever had! Infused with sweet flavors and the perfect amount of tang from the blood oranges creates the most amazing dance party for your tastebuds. This salad is perfect for a warm Spring night's dinner, a Summer day's lunch, or anywhere in between. It takes no time to toss together and will have you coming back for more.

Ingredients:

  • 1/2 cup baby spinach

  • 1/2 cup romaine lettuce

  • 1 1/2 tsp raw local honey

  • 1/2 Tbsp olive oil

  • sea salt to taste

  • 1 blood orange

Directions:

  1. Chop and toss together the baby spinach and romaine lettuce in a large bowl. Take a blood orange and cut it up into small chunks. Add them to the large bowl of greens.

  2. To make the dressing, whisk the olive oil, honey, and salt in a smaller bowl. Squeeze the orange of 1/2 of it's juice and add to the smaller bowl of dressing. Whisk once again.

  3. Pour dressing over the greens and orange chunks.

I served my salad on the side on baked salmon and it was so delicious.
